We are just starting to see some good artisan charcuterie restaurants in the midwest. This is one of the most unique of them because it is a charcuterie board. The meat on this board is in a large, flat tray, allowing meat to be sliced and eaten at any angle. These cuts of beef are then served on a bed of cilantro and mint leaf.
This is a good example of how a charcuterie board has evolved over time. When the board was first invented in the 1950’s, meat was cut at a variety of angles and presented as flat pieces of meat. Now that this charcuterie board is available, many chefs will cut the meat the way they want it, because it is easier to slice on a flat surface. As a result, the board is available to be sliced on almost any angle.

I have a good one from India called the Panchang, which is made of bamboo and is really strong and stable, and is great for chopping things.
And a friend of mine has an awesome one (which I have not seen) that is made of bamboo and is really easy to use.
